Unfortunately, this summer is breezing by. Before you know it, September will be here, school will be in session and early morning traffic congestion will be that much worse. Since we are on limited time, I can’t let this hot summer season pass without offering up a cool treat that is sure to impress your taste buds and give you the perfect sugar rush on those fiery hot days. This is a family-friendly recipe that can be altered to everyone’s liking. The best part is that the prep time is less than 10 minutes. You can’t beat that!
I present to you Island Icicle’s (aka Popsicle’s or “pops”). I was introduced to these pops as a little girl. Summer’s in Turks and Caicos Islands was no joke…can you say “blazing Hip-Hop and RnB!” As kids, my cousins and I yearned for the moments to be blessed with 25 cents so we could run through the yard to Ms. Annie’s shop to get some icicles. The biggest decision was choosing a flavor. Her pop’s came in colorful Dixie cups with popular cartoons making them even more attractive to the adolescent mind. Although we loved the Dixie cup design, it was imperative that we finished the frozen treat before it melted and started seeping through the paper cup…not fun! By the time we were done with our pops, we wanted more. They were that good!
I’m elated to share this island treat with you. If you’re not a fan of fruit cocktail you can simply whip up a sweet batch of Kool-Aid and poor the mix in the Dixie cups and freeze.
